Banana Nut Bread — Healthy, Moist & Delicious!

Banana Nut Bread

Ingredients

1 cup all-purpose flour
1 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup sugar
1 cup mashed ripe bananas
3/4 cup silken soft tofu
1/4 cup canola oil
1 teaspoon vanilla extract
1/2 cup chopped walnuts

Directions

~Preheat oven at 350°.

~In a large bowl, combine the first five ingredients.

~In a small bowl, beat the sugar, bananas, tofu, oil, and vanilla. Beat into dry ingredients just until moistened. Fold in walnuts.

~Transfer to an 8×4″ loaf pan coated with cooking spray. Bake for 50-55 minutes. Cool for 10 minutes before removing from pan to a wire rack.

~Makes 1 loaf.
