Applesauce Muffins — A great-tasting recipe for Sunday brunch!

Applesauce Muffins

Ingredients

2 cups biscuit/baking mix
1/4 cup sugar
1 teaspoon ground cinnamon
1 egg
1/2 cup applesauce
1/4 cup milk
2 tablespoons vegetable oil

Topping:
1/4 cup sugar
1/4 teaspoon ground cinnamon
2 tablespoons butter, melted

Directions

~Preheat oven at 400°.

~In a bowl, combine the biscuit mix, sugar and cinnamon. In another bowl, beat the egg, applesauce, milk, and oil. Stir into dry ingredients just until moistened.

~Fill paper-lined muffin cups two-thirds full. Bake for 10-12 minutes. Cool for 5 minutes before removing from pan to a wire rack.

~In a small bowl, combine sugar and cinnamon. Dip muffin tops in melted butter then in cinnamon-sugar.

~Makes 1 dozen.
