Corn and Bean Chili — A great-tasting soup!

Corn and Bean Chili

Ingredients

2 pounds ground beef
1 small onion, finely chopped
1 envelope chili seasoning mix
3 — 16 oz. cans chili beans, undrained
1 — 46 oz. can V8 juice
1/2 teaspoon salt
1 standard size can cream-style corn
Shredded cheddar cheese

Directions

~In a large Dutch oven, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the seasoning mix, beans, V8 juice, and salt. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes.

~Stir in corn. Cook and stir over low heat for 15 minutes. Sprinkle with cheese.

~Makes 4 quarts.
