Ham and Black Bean Soup — An excellent soup for a cold winter day!

Ham and Black Bean Soup

Ingredients

3 — 15 oz. cans black beans, rinsed and drained
2 — 14-1/2 oz. cans beef broth
1 — 14-1/2 oz. diced tomatoes, undrained
1-1/2 cups cubed fully cooked ham
1 — 4 oz. can chopped green chilies
1/4 cup red wine vinegar
1 large onion, chopped
3 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon pepper

Directions

~In a 3-qt. slow cooker, combine all ingredients.

~Cover and cook on high for 4-5 hours (or until onion is tender).

~Makes eight servings.
